10 slices of thick-cut bacon
2 T dark brown sugar
1 t black pepper
1/2 t ground fennel seeds (optional)
1. Preheat over to 400 degrees. Set a wire rack in a foil lined rimmed baking sheet.
2. Line up bacon slices, side by side (ok if they touch).
3. In a small bowl, stir remaining ingredients & sprinkle mixture evenly over bacon.
4. Bake in center of oven for about 35 minutes, or until most fat has been rendered out and bacon is crisp.
5. Remove from oven and allow bacon to cool so that the sugar can harden.
(Cook's note: I like pepper so after I've coated the bacon with the brown sugar mix, I sprinkle on extra cracked pepper to give it more of a sweet & hot kick!)
