1 pkg (18 oz) spice or carrot cake mix
1 c water
3 eggs
2 T veggie oil
1 zucchini, shredded
3 T chopped walnuts, toasted*
3/4 t vanilla
1/4 c 10x sugar
1-2 t milk
1. * To toast walnuts, spread in single layer on a baking sheet. Bake at 350 degrees for 5 minutes or until golden brown.
2. Preheat oven to 325 degrees. Spray a 12 c bundt pan with Pam.
3. Combine cake mix, water, eggs and oil in large bowl; Mix according to package directions. Stir in zucchini, walnuts & vanilla until well blended. Pour into prepared pan.
4. Bake 40 min or until inserted toothpick comes out almost clean. Cool in pan 10 min. Remove to wire rack; Cool completely.
5. Combine 10x sugar & milk in a small bowl; Stir until smooth. Drizzle evenly over cake. Let stand until set.
(Cook's note: You can't go wrong starting with a cake mix!)
