1. 3 c ham
2. 1/2 - 1 c celery, finely chopped
3. 1/2 c onion, finely chopped
4. 2 hard boiled eggs, chopped (optional)
5. Dash liquid smoke
6. 1/4 c sweet pickle relish, drained ( I use both sweet & dill relish)
7. 1/2 c mayo
8. 1t yellow mustard (Optional)
9. Pickle juice if needed
10. Black Pepper to taste
1. Individually chop ham, celery & onion in separate batches using a food processor.
2. Place in bowl and add chopped egg, mayo, pepper, liquid smoke, and mustard,
3. Chill for several hours.
4. Serve on crackers or as a sandwich spread.
(Cook's note: I use my Kitchen Aide grinder attachment to grind the ham; a food processor to chop everything else. Add mayo a little at a time. Start with less and add more if needed. You can always add more but can't undo it if you add in too much mayo! Liquid smoke is my secret ingredient...but only use a dash....a little goes a long way! Also, I don't always add mustard or hard boiled egg!)
