2 cans (14 oz each) water packed artichokes, rinsed, drained & quartered
2 T evoo
3 garlic cloves, minced
2-2/3 c chopped, cooked chicken
2 cans condensed cream of chicken soup
1 c mayo
1 t lemon juice
1/2 t curry powder
1.5 c shredded cheese (6 oz)
1 c seasoned bread crumbs
1/4 c Parmesan
2 T butter, melted
1. Combine artichokes, oil & garlic. Place in greased 2.5 qt baking dish. Top with chicken.
2. In separate bowl, combine soup, mayo, lemon juice & curry; Pour over chicken.
3. Sprinkle with cheddar cheese.
4. Combine bread crumbs, Parmesan & butter; Sprinkle on top of cheese.
5. Bake, uncovered at 350 degrees for 30-35 minutes. Yields 6 -8 servings.
