4 boneless, skinless chicken breasts
2 eggs, beaten
1 cup crushed Ritz or similar butter crackers
1/2 c butter, cut into pats
1/2 t garlic salt
pepper to tsate
1. Preheat oven to 375 degrees F. Lightly spray a 9x13 baking dish with non-stick cooking spray.
2. Place crushed crackers in a medium size shallow bowl. Place eggs in another separate medium size shallow bowl.
3. Dip one chicken breast at a time in the eggs, then dredge in the cracker crumbs, coating well on all sides.
4. Place chicken breasts side-by-side in baking dish.
5. Add butter evenly on top of chicken.
6. Bake 40 to 45 minutes. ( or 165 degree F internal temperature).
(Cook's note - This recipe should not be confused with Indian Butter Chicken, which is totally different!)
