about ½ cup of sweet and sour sauce
3 small stalks of broccoli, cleaned, cut into small florets and blanched
1 TB of sesame oil,
black sesame seeds,
a handful of roasted cashews,
and 2 stalks of sliced green scallions.
Ingredients for sweet & sour sauce:
1 T soy sauce
1 T rice wine vinegar (or white vinegar)
1 clove garlic, crushed
1/2 t Sriracha sauce
1 t ketchup
3 T sugar
Plate on a large plate or in a glass container and drizzle additional sauce if needed. This makes about 3 ½ cups and leftovers can be stored in the fridge for up to 5 days.
To make sweet & sour sauce:
Combine sauce ingredients in microwave proof bowl. Microwave sauce in 30 second intervals until sugar dissolves.
To make salad:
1. Spoon out 1/4 a cup of sweet and sour sauce in a large bowl.
2. Add broccoli to evenly coat with the sauce.
3. Drizzle with sesame oil and add your preferred amount of sesame seeds.
4. Add more sweet and sour sauce if desired.
5. Add handful of roasted cashews.
6. Add scallions and stir.
Keep refrigerated. This makes about 3 ½ cups and leftovers can be stored in the fridge for up to 5 days.
