3 –lb corned beef
2 large potatoes, quartered
1 bag mini carrots
1 head cabbage, wedged
1 onion, quartered
Marinade:
¼ c. beer; ¼ c. black coffee, ¼ c. beef broth, 3 T Dijon or yellow mustard, ¼ c. brown sugar, 1 t. pickling spice
Spray crock pot with Pam. Put corned beef in pot and top with potatoes. Add carrots, cabbage & onion.
Whisk together marinade ingredients. Pour marinade over beef and cook on high 10-12 hours.
(Cook's note: You can substitute beef broth with beer. The secret ingredient, however, is using strong black coffee.)
