Ingredients

Whole zucchini (small to medium)
Pepperoni or salami
Cheese slices (mozzarella, pepper jack, etc)
Italian seasoning
Thyme
Pepper to taste
Parmesan cheese
Pizza or marinara sauce for dipping

Cooking Instructions

Preston oven to 425 degrees.
1. Using a pair of chopsticks or pencils against each side of a zucchini, cut whole zucchini at 1/4 in intervals, being careful not to cut all the way through zuchinni. (The chopsticks will help hold the zucchini and prevent you from slicing all the way through.)
2. Cook zucchini 10 minutes & remove from oven.
3. Lightly spray zucchini with Pam. Sprinkle with Italian seasoning & thyme. Sprinkle with pepper.
3. Place a slice of cheese between a cut, then alternate placing pepperoni between; continue alternating cheese & pepperoni till each split is filled.
4. Sprinkle zucchini with Parmesan cheese and additional Italian seasoning.
5. Bake an additional 10 minutes.
6. Serve with sauce on the side.
