1 c risotto
1.5 c hot chicken broth
1 T chopped green onion
1 T butter
Fresh grated Parmesan or Asiago cheese
1. In saucepan, melt butter and add chopped chicken.
2. Stir in rice.
3. Very slowly stir in 1/4 c broth at a time, until all is used.
4. The rice should be tender.
5. Serve with grated cheese.
6. Optional additional add-ins for the above prepared risotto:
A. Add 1-lb crab meat; Also good with small cooked shrimp and/scallops.
B. For Primavera, Add1/2 -lb fresh spinach, 1/4-lb fresh green peas, 1/2 -lb asparagus, and 1/4 c fresh chopped parsley. This is also good with broccoli.
C. Add 1/2 -lb sliced portabello mushrooms that have been sautéed in butter.
