2 lbs dried mixed fruit
3 cups black tea
3 cups self-rising flour
1. Preheat oven to 250 degrees.
2. Soak fruit in tea overnight.
3. Stir flour into soaked fruit and mix well. Add more tea if the mixture is too dry. It is quite a thick mixture but sometimes the fruit really absorbs the liquid and it is hard to dampen the flour.
4. Spoon mixture into a 9 inch lined cake tin.
5. Bake for 2½ hours or until cooked through.
6. Remove and cool completely. Wrap in tin foil or place in an airtight container. Keeps for a month.
(Cook's note: Warning.... I just found this recipe and have not tried it yet! I don't normally post something I haven't tried, but I was intrigued by 3 ingredients and thinking of Christmas in this heat! I was afraid if I didn't post it, I wouldn't find it again. I have converted everything from European measurements and I will update comments once I try it. While the recipe calls for Black Tea, you can substitute Iced Coffee, Orange Juice, Apple Juice, or Chocolate Milk. You might also add Pineapple Juice or crushed Pineapple or even marmalade to the recipe!)
