1 large cream cheese, softened
1/2 c powdered sugar
2/3 c plain Greek yogurt
1/4 - 1/2 t mint extract
green food coloring, optional
2/3 c mini chocolate chips
1. In medium bowl, and beat cream cheese with a hand mixer until creamy and smooth.
2. Add the 10x sugar and continue to beat on high speed, until fully incorporated.
3. Add Greek yogurt and mint extract; Continue to beat on high speed until well incorporated, scraping sides of bowl.
4. Beat in food coloring until fully incorporated with ore white streaks.
5. Stir in chocolate chips by hand; Save a few for sprinkling over the top of the dip when serving.
6. Serve immediately, or refrigerate it for up to 2 days before serving.
7. Serve with cookies, or even pretzels for a sweet and salty twist as dippers.
(Cook's note: This dip is best consumed the day it's made, but can be refrigerated for up to 2 days.)
