1-lb spicy or hoy pork sausage, cooked & drained
1 jar spaghetti sauce
1/2 c water
2 eggs, beaten
1 carton (24 oz) cottage cheese (or Ricotta)
1/3 c grated Parmesan cheese
2 T dried parsley
1/2 t each: garlic powder, black pepper, basil & oregano
9 uncooked lasagna noodles
3 c (12 oz) mozzarrellam
1. Cook sausage; drain. Stir in water & spaghetti sauce & simmer, uncovered, for 10 minutes.
2. Meanwhile in separate bowl, combine next 8 ingredients & seasonings.
3. Spread 1/2 meat sauce into greased 13x9x2 casserole dish;
4. Layer 3 noodles & top noodles with 1/3 cheese sauce, followed by 1/3 meat sauce, then mozzarella.
5. Repeat layers 2 times.
6. Cover and bake 375 for 45 min.
7. Uncover and bake 10 min longer.
8. Let stand 15 minutes before serving.
(Cooks note: this can be made in advance and cooked the next day. Serves 12.)
