Ingredients

12 eggs (or egg substitute)
Seasoning of choice: salt, pepper, garlic powder, onion powder, thyme, oregano, marjoram)
Low fat cheese, shredded
Chopped veggies of choice: broccoli, asparagus, zuchini, mushroom, sweet onion
Chopped cooked meat of choice: cham, sausage, turkey, bacon
Chopped spinach

Cooking Instructions

Spray muffin cups with Pam. Fill muffin cup with veggies, meats, cheese and spinach.

Add seasoned egg to cup. Stir mixture around in cup.

Cook 25-30 minutes at 375 degrees, or until egg is cooked.

Store refrigerated in baggies.

(Cook's note: This is a great grab and go breakfast, just warm in microwave. Will keep about a week in refrigerator. Can be frozen and the heated. Can be made low cal and/or low carb and also with only egg whites.)
