1 box vanilla cake mix
3 eggs
1 1/4 c oil
1 medium can of fruit cocktail, juice reserved
1/2 c water
1/2 c juice from fruit cocktail
1. Preheat over to 350 degrees. Grease and flour Bundt pan.
2. Mix cake mix, eggs, oil, water and juice with hand mixer.
3. Stir in fruit cocktail. I usually have reserved a spoonful of dry cake mix and mix it with the fruit cocktail so that the fruit doesn't just sink to the bottom of the pan. Pour cake batter into prepared Bundt pan.
4. Bake for 30-45 minutes. Enjoy!
(Cook's note: My mother always made a really good old fashioned fruit cake which is also posted at this site. Recently, she brought this new recipe to a gathering and I must admit, it is one of the moistest cakes I have ever tasted. It's also a fail proof recipe and you can slice it and freeze pieces individually and it comes out just as fresh as when you first baked it!)
