1.5 oz (or 1 block) of any kind of cheese you prefer
microwave proof silicone bowl
1. Melt cheese in microwave, 20-25 seconds to melt.
2. Stir with spatula
3. Pour melted cheese onto parchment paper and cover with another piece of parchment.
4. Roll out with rolling pin and shape into a circle.
5. Refrigerate 1-2 minutes.
6. Peel cheese from parchment paper.
7. Crisp in microwave for 1 minute; or keep refrigerated in parchment paper & put in a zip-lock baggie until ready to use.
(Cook's note: Folio's are basically a thin cheese round for roll-ups or used as a bread substitute. Even hubby loves them. I use them as a wrap a breakfast roll-up with egg, sausage, scrapple or bacon. For lunch, try it with tuna fish, chicken or shrimp salad, BLT's and various lunch meats. Add a little spinach, lettuce and/or condiments of your choice. You can even use your leftover proteins and/or cooked veggies. Today I'm making a Reuben and brought sauerkraut, corned beef lunch meat and Thousand Island dressing for lunch at work! Pop them in the microwave for about 15-20 seconds to just warm and soften your folio. You can find them in Costco or Sam's club, if they're not sold out and they cost $8.99 for a pack of 10. If you're feeling frugal or can't find them, this homemade version costs about 15 cents a piece!)
