4 Oz can of shrimp
1 c Mayo
1 c cheddar cheese, grated
1 t curry powder
1 t onion powder
8 English muffins halves
1. Drain and chop shrimp.
2. Mix remaining ingredients.
3. Spread on English muffin halves.
4. Cut each muffin into quarters.
5. Bake at 350 degrees until golden brown
(Cook’s note: This is the shrimp version of the 70’s recipe for the famous crab meltaways! Freeze at least 30 minutes. Can be cooked immediately or kept frozen in baggies until needed. When ready to cook, broil till the muffin quarters puff-up, bubble and are slightly browned. Another fast fix for company or unexpected guests!)
