Marinade for a For a 16-24 lb turkey:
2 gallons of water
10 oz soy sauce
1/2 c kosher salt
1/2 c sugar
2 T dried sage
2 T celery seed
1 T dried thyme
1. Mix all ingredients in a 5 gallon bucket.
2. Stir to dissolve salt and sugar.
3. Add turkey, cover and refrigerate 8 hours or overnight.
4. Rinse well and follow your regular cooking instructions.
(Cook’s note: Don’t forget to remove neck and gizzards! Bake at 325 degrees until temp is 165-175 degrees at Thick point of thighs.
8-12 lbs, 2 3/4 -3 hours;
12-14 lbs, 3 - 3.5 hours;
14-18 lbs, 3 3/4 - 4 1/4 hrs;
18-20 lbs, 4.5 - 5hrs.)
