2 c bamboo shoots
1 c chopped onion
4 T soy sauce
1 t salt
1/8 t pepper
1 t ginger
8 eggs, slightly beaten
1-lb crab meat
Butter for frying
1. Combine all ingredients, adding crab meat last.
2. In frying pan, heat 1/2 c butter.
3. Drop fritter mixture by large spoonfuls into hot butter.
4. Fry to golden brown, turning once.
(Cooks note: Makes 8-12 servings. Moist due to bamboo shoots, light due to beaten eggs which will bind while frying.)
