Ingredients

1 T cornstarch
1/4 t salt
dash white pepper
1 T sherry

Cooking Sauce: 1 T each of sugar, vinegar & sherry; 2 T soy sauce, 3 T chicken broth (or water) & 2 t cornstarch.

3/4 lb pork (or chicken breast), cut into matchstick size pieces
3.5 T oil
2 cloves garlic, chopped
1 t. fresh ginger, chopped
3-4 small chili peppers
2/3 c bamboo shoots & water chestnuts
10 whole green onions, sliced in 2 in lengths

Cooking Instructions

Combine cornstarch, salt, pepper & sherry. Add 1.5 T oil. Add pork and let stand 15 minutes.

Mix cooking sauce ingredients together.

Coat wok with oil. Add remaining non-meat ingredients. Add meat. Once meat is 80% done, add cooking sauce. Sauce will thicken quickly!
